Swiss cheese is the American name for Emmental cheese, a yellow, medium-hard cheese that originated in the area around Emmental, in Switzerland. The flavor is mild, nutty, and sweet, and the cheese is famous for its large holes (or “eyes”).
Lowville Producers Dairy is owned by 165 Dairy Families in Upstate New York between the foothills of the Adirondack Mountains and the Tug Hill Plateau. The cooperative has been in business since 1936. Its dairy farms produce over 310 million gallons of Grade A milk each year.
