Cheese curds are made from pasteurized milk in the early steps of the cheese-making process, and when freshly made have a pleasant, squeaky texture when chewed! It is important to note that only truly fresh cheese curd (a few days old at most) contains this “squeaky” quality; because of this, they may not retain this quality when shipped. However, even after cheese curds have lost their squeak, they can be microwaved for just a few seconds to bring it back.

Great Lakes Cheese is an American cheese producer headquartered in Hiram, OH with a state-of-the-art cheese production plant right in Adams, NY. The Adams plant primarily produces our award winning New York Cheddar. The focus of the Adams producers is to maintain the “Old World Traditional Style” manufacturing practice for the high quality dairy products produced. Most of the premium cheese they produce in Adams is aged.

    This is “the” cheese curd you know and love. If you grew up eating cheese curd anywhere in the Northern New York region, chances are pretty good it was by Great Lakes. (Yes, I hate to be the one to break the illusion, but even River Rat’s cheese curd is just Great Lakes repackaged with their own label!) Fresh, squeaky, and salty… a great traditional upstate taste.
